Make the base of the khao soi soup by heating the spice paste in the coconut cream. Cook the beef in the soup, over low heat with a lid on the pan. Prepare the egg noodles as on the package. Fry some of the uncooked egg noodles in hot oil until crispy and drain. Season the soup with fish sauce and palm sugar. Put the noodles in a bowl and pour the soup with the beef over the noodles. Garnish with green onion and the crispy egg noodles. Serve with chili pepper and fresh lime juice.
Tip: Make sure the beef is well cooked. This soup is well suited to prepare a day in advance.
